Sous Chef - Serengeti National Park

About the Role

A reputable tour company operating luxury safari camps and lodges in Tanzania is looking for a highly motivated, experienced, and professional Sous Chef to join their kitchen team in their camp in Serengeti National Park.

Key Responsibilities

  • Assist the Head Chef in managing the kitchen and ensuring smooth daily operations.
  • Prepare and present high-quality meals according to company standards.
  • Supervise and guide kitchen staff during food preparation and service.
  • Ensure food quality, taste, presentation, and consistency.
  • Maintain high standards of hygiene, cleanliness, and food safety in the kitchen.
  • Monitor food stocks and minimize wastage.
  • Ensure proper storage and handling of food items.
  • Coordinate kitchen activities with the restaurant and service team.
  • Train and mentor junior kitchen staff.
  • Ensure all meals are prepared and served on time.
  • Assist with stock-taking and control of kitchen supplies.
  • Ensure compliance with company policies, food safety regulations, and camp standards.
  • Perform any other duties assigned by the Head Chef or management.

Qualifications and Experience

  • Certificate or Diploma in Food Production or Hotel Management, or a related field.
  • At least 3 years of working experience as a Chef de Partie, Sous Chef, or in a similar position, preferably in a lodge, hotel, or safari camp.
  • Experience in a remote safari camp environment will be an added advantage.
  • Good knowledge of international and local cuisine.
  • Strong knowledge of food hygiene and safety standards.
  • Good leadership and team-management skills.
  • Ability to work under pressure and meet deadlines.
  • Good communication and interpersonal skills.
  • Ability to work and live in a remote camp environment.
  • Must be disciplined, reliable, creative, and passionate about cooking.
